Pomegranate Jus
This recipe uses a long cooking technique to concentrate the beautiful flavours of the middle east into a sweet and sour sauce that will lift any dish you put it with.
Ingredients
1 Litre Pomegranate Juice
1 Litre Vegetable Stock
20 Dried Dates
2 Shallots Sliced
2 Tbls Pomegranate Molasses
2 tsp Coriander Seed
1 ½ tsp Cumin Seeds
1 tsp Fennel Seeds
20 Cardamom Pods Crushed
½ tsp Black Peppercorns
2 Sticks Cinnamon
½ tsp Turmeric
½ tsp Paprika
Pinch Saffron
Salt (if Needed)
Method
Put all of the ingredients into a pan and reduce down until a thick sauce consistency is achieved, this could take a long time. Taste and add salt if needed
