Smoked Aubergine Puree
Ingredients
2 Aubergines
2 Cloves Garlic
2 Sprigs thyme
Olive Oil
Lemon
Salt and Pepper
Method
Cut one of the Aubergines in half and score the flesh. Slice the garlic thinly and push it into the flesh of the aubergine. Drizzle with olive oil, season and then sandwich the thyme between the halves. Wrap the aubergine in tin foil and bake for at least 45 minutes. It must be very soft, so don't be afraid to put it back in if it is not really well cooked.
Take the other Aubergine and put it over the hob flame and cook it until it is black and very soft.
Scrape the flesh out of both aubergines and blend until very smooth. Add a twist of lemon and season.
