Vanilla Labna

Ingredients:
Labna
500g plain Greek style yoghurt
1 vanilla pod
runny honey to taste
Method:
Cut a large piece of muslin, the size of a tea towel or just use a clean tea towel. You will also need some string to tie up the muslin and somewhere to hang the muslin over a bowl.
Spoon the yoghurt into the middle of the muslin, gather up the muslin, tie it tightly with string and hang it over a bowl to catch the whey. Leave for 8 hours.
Untie the muslin and scoop out the labna into a bowl. Scrape the seeds out of the vanilla pod, keep the vanilla pod to infuse your caster sugar. Mix the scraped out seeds of the vanilla pod into the labna.
Add honey to taste.
Serve with Strawberries in Rosewater Syrup.
Try alternative fruits including pears, peaches, plums, raspberries, rhubarb, blueberries, blackberries and redcurrants. Adjust the quantity of the honey to the sweetness of the fruit.
Try with soya yoghurt and maple syrup for a vegan version.
